
This quick 15 minute chicken noodle stir fry is a weeknight meal that’s delicious, easy, and packed with the fresh flavors of cruciferous vegetables, chicken, and pineapple. What’s even better is that you can put it all together in less time that it’ll take to grab take-out.

Convenience foods. They make life easier, they allow you to keep your sanity, but rumor on the street says that they sometimes get a bad rap. I’m here to squash that rumor.
My journey to make eating vegetables easy
Are you ready for a bit of story time?
I used to think for myself AND actually encouraged my clients/anyone I’d talk nutrition with, to spend the time to prep all their food… to do all that work. That it’s worth the few cents you save, that it’s better for some reason. More virtuous or something I guess. I mean that’s the way my mom did it, and therefore that’s how I should do it and everyone else should do it.
But as time went on, life got busier and I had less time to spend in the kitchen. During that season, I ate fewer vegetables because I thought the healthy way was to spend time chopping and prepping those vegetables. If there’s only one way, there’s only one way. That one way was to spend a lot of time or spend no time. One thing I did realize during this period was that I felt different and was missing out on foods I really had come to enjoy, I missed those vegetables.
Something had to change.
I worked to redefine convenience for myself and have been experimenting with convenience foods ever since. Particularly with pre-cut vegetables. Sure they do cost a bit more, but that’s a small price to pay for convenience and actually eating vegetables. Pre-cut whole vegetables are a great way to save time and still eat foods that feel good and taste good.
How You Can Make Eating Vegetables Easy
So, if you find yourself wanting to eat more veggies AND actually simplify your life like me, I’ve got an idea to help you accomplish your New Year’s resolutions and actually stick to them. I mean a quick buy that can accomplish 2 goals without any effort, it’s a surefire way to success. You’re welcome.
That’s where my favorite kind of convenience food, Mann’s Veggie Slaw Blends, comes in. They make convenient pre-cut vegetable slaws in a variety of delicious flavors, like:

Just last week I made this stir fry, a quick coleslaw to top pulled pork sandwiches, and a warm chicken salad with the kale beet blend. You really can use them in anything. I even plan on making rice bowls next week with more of this pineapple soy sauce, and guess what easy veggies I’ll add to it, you got it, the power blend slaw. I can’t wait.
I even actually made one of my favorite salads that my mom makes. I have never made this salad on my own because it calls for shaved Brussels sprouts and finely chopped kale for the salad. Even if I had time for that, I wouldn’t spend it chopping and chopping and chopping. My kale hating uncle even liked that salad, so using these really easy veggie blends can get your most hesitant veggie eater to try it.
So use these convenient easy veggie blends to bump up the nutrition and tastiness of your next meal. See, convenience isn’t necessarily unhealthy. Not at all.

15 Minute Chicken Noodle Stir Fry

Ingredients
- cooking spray
- 2 chicken breasts cubed
- salt & pepper
- 3 oz thin Japanese udon noodles
- 20 oz can pineapple chunks
- 2 tablespoons distilled white vinegar
- ½ cup soy sauce
- 1 teaspoon garlic salt
- lime for garnish (optional)
- 1-2 bags Mann’s Rainbow Salad Slaw
Instructions

Spray large fry pan or wok liberally with cooking spray, set on medium-high heat. Place chicken chunks on pan, season with salt and pepper. Cook for 4 minutes, flip and cook another 3-4 minutes.

While chicken is cooking, boil water in a medium saucepan. Once boiling, add noodles. Cook for 4-5 minutes, or until soft. Drain water, set noodles aside.

Pour pineapple chunks with juice into small mixing bowl, add soy sauce, vinegar, and garlic salt. Mix together while chicken and noodles are cooking.

Once chicken is done, add noodles and pineapple to chicken. Stir.

Then add 1 or 2 bags of Mann’s Rainbow Salad Slaw. Pour sauce over ingredients, stir. Cook until vegetables soften, about 3 minutes.

Serve hot, add lime for garnish
Notes
- You can replace udon noodles with thin rice noodles.
- You can also finely chop 2 garlic cloves instead of the garlic salt, but garlic salt is just so easy.
- If you’d like to kick up the heat on this dish, top with Sriracha or add red chili flakes. or both! I love both
