Simple is usually best, and these Buttered Dilly New Potatoes are no exception! Just 5 minutes of prep time results in the perfect side dish — crispy, tender potatoes that are lightly dressed in butter, garlic, salt, and fresh herbs!
With gardens being planted and local produce making appearances in farmers’ markets, I figured that it would probably be helpful to share a recipe for an easy side dish that takes advantage of these delicious fresh ingredients. And when you combine garlic, butter, and herbs…magical things happen!
This is one of those great recipes that is incredibly versatile and requires almost no hands-on time. The potatoes turn out crispy on the outside, tender on the inside, and perfectly seasoned with simple, rustic flavors. Serve them with burgers from the grill, pair them with your favorite fish, or pile them on your plate with a juicy steak. These potatoes taste amazing with just about any dinner, and everyone at your table will love them!

- 24 ounces small new potatoes such as petite white potatoes
- 4 tablespoons melted butter divided
- ¼ teaspoon salt plus more to taste
- 1 ½ tablespoons fresh dill minced (or 1 teaspoon dried dill)
- ½ teaspoon garlic powder

Spray a small baking dish with cooking spray and set aside.

Fill a large saucepan with about 1 inch of water. Bring to a boil, add potatoes, and cook (covered) for 10 minutes.

Drain potatoes and place them in the prepared baking dish.

Brush potatoes with about 2 tablespoons of the melted butter. Sprinkle with salt and place under the broiler for 10-15 minutes (or until tender), stirring regularly. The potatoes should have a nice golden crust on the outside.

Stir dill and garlic into remaining melted butter. Pour butter mixture over hot potatoes and toss to coat. Serve warm.
