What’s Your Trader Joe’s Addiction?

We love, LOVE Trader Joe’s.

And, almost more than any other product they carry, we’ve fallen head-over-heels for their edamame hummus. Our families devour it, and if we dare to share some around the bonfire with neighbors, it’s gobbled up in no time (it’s best to keep your fingers a safe distance from the bowl). In fact, it’s beaten out most of the other hummus flavors Trader Joe’s carries (in our informal, neighborhood taste test).

You would think we’d be thrilled, right? A healthy and uber-delicious snack that everyone just loves – perfect!

But, here’s the problem: The nearest Trader Joe’s location is about a half hour from us, which is just a little too far for our weekly grocery trips, especially when we’ve got three other grocery stores right in our own town.

Oh, sure – we’ve seen edamame hummus at some of those other stores, too, but it’s the Trader Joe’s version that got us hooked. We knew what we had to do …

And, you can easily do it, too!

How to Make Our Edamame Hummus Recipe

It’s a total snap!

Just like with our White Bean Hummus recipe … there’s practically no effort here at all!

• Just head to the kitchen and toss a cup of shelled edamame (thawed) into a mini food processor (we like to use the smallest, “mini” container in our Ninja processor set).

• Then, add tahini, water, lemon juice, canola oil, garlic, kosher salt, onion powder, and black pepper.

• Process until it’s the consistency you like, scraping down the sides a few times as needed.

Done! (See … told ya it was a total snap to make!)

Serving Ideas

If you can possibly resist scarfing it all down immediately, we recommend that you chill this particular hummus recipe for an hour or so to let the flavors meld.

It’s great served with pita bread or pita chips (whole grain, of course!), pretzels, raw veggies … and straight off a spoon!

For a final flourish before serving, you can drizzle a little olive oil on top if you’d like.

Turns out that we actually love this version of edamame hummus even more than the Trader Joe’s version that started us on this little journey. But shhhhhh … don’t tell! We’re still really hoping that a new Trader Joe’s is going to open in our town, and maybe give out free edamame hummus at the grand opening!

Ingredients

  • 1 cup frozen, shelled edamame, thawed
  • 3 1/2 tablespoons tahini
  • 3 tablespoons water
  • 2 tablespoons lemon juice
  • 2 tablespoons canola oil
  • 2 cloves garlic, roughly chopped
  • 3/4 teaspoon kosher salt
  • 1/4 teaspoon onion powder
  • 1/8 teaspoon black pepper
  • olive oil to drizzle on top for serving, optional

Instructions

  1. Combine all ingredients in a mini food processor (we like to use the smallest, “mini” container in our Ninja processor set).
  2. Process until desired consistency, scraping down the sides as needed.
  3. Refrigerate for at least one hour to allow flavors to blend.
  4. When serving, drizzle with a little olive oil, if desired.
