Easy Air Fryer Recipe
Served with fresh sweetcorn salsa made from canned sweetcorn. No messing about breading means a 15-minute dinner!

A quick word on air fryers
Oh my goodness, cooking doesn’t get easier than this fuss-free, no-mess
dinner.
If you don’t already have an air fryer be getting one this very day!
You can’t go wrong with a
Ninja air fryer, by the way, I’m not sponsored by Ninja, I’m just saying.
Before buying one, it’s worth doing some research as some may not be quite
what you wanted
For example, the Ninja Double Stack heats from the back and not the top,
therefore the are holes at the back of both drawers making it unsuitable for
cooking anything liquid such as curries.
There are hundreds of reviews on YouTube – some more helpful than others.
The temperature probes on all Ninjas are known for not being very accurate, so
you really will need to buy a
digital thermometer probe.
You can buy a cheap one, or pay a lot, it’s up to you. The more expensive
Thermapen
is the bee’s knees and is used by top chefs worldwide and is really accurate
and fast reading.
Cooking times for cod in an air fryer
You may have seen Jamie’s Air Fryer Meals on Channel 4 where he cooks two
pieces of frozen cod straight from the freezer at 200°C/400°F for just 8
minutes in the
Tefal easy fry air fryer.
Despite the differences in cooking temperatures between mine and his fish (I
didn’t use frozen fish) I’m not sure how his fish cooked so quickly.
Even at 200°C in the Ninja, I don’t think frozen fish would be cooked? I’ll
have to give it a go.
He doesn’t use a temperature probe, he just declares that it’s cooked. Of
course, it depends on the overall size and thickness.
I used room-temperature cod and cooked it at 180°C /356°F, so yes, a lower
temperature but my smaller piece took 9 minutes.
Start by making the sweetcorn salsa (if serving)
The amounts can be adjusted to suit however many you are making this for.
- a few deseeded and chopped baby tomatoes (grape tomatoes)

a couple of spring onions (green onions, scallions) washed, topped and
tailed and finely sliced
- 1 green chilli – deseeded and finely chopped

a 200g can of sweetcorn – drained well. I didn’t use the whole can, I gave
some to my chickens!
- a small bunch of fresh coriander leaves only – chopped
To make the salsa
Put the prepared ingredients into a bowl with a drizzle of olive oil and mix
it together. That’s it, job done!

Ingredients for the fish
- 2 fresh not frozen cod fillets mine were 140g each – room temperature
- a spray of rapeseed oil – to coat the bottom tray of your air fryer
- melted butter – enough to coat your fish
- a sprinkling of paprika – optional
You can air fry just one piece of cod the timings will be the same. 😉
Pack of 2 cod fillets – for some bizarre reason one is always bigger than the
other, how annoying!
My cod had the skin on but I removed it, it’s easy to do.
You need a sharp knife then place the fish onto a clean board and hold one
hand firmly over the top with fingers and thumb out of the way, please!
Let the knife do the work for you, move the knife, not the fish. It’ll be
easier for you to watch this short video on
removing the skin on fish
than for me to try to explain.
Spray the air fryer tray with rapeseed oil or similar.
Coat the fish with melted butter and sprinkle with paprika.
Place into your air fryer, cook for 180°C/356°F and set the time to cook for
12 minutes.
After 9 minutes check how it’s doing as you don’t want dry fish.

My smaller piece of cod was cooked at 9 minutes and the bigger piece cooked
perfectly in 11 minutes.
How to know when fish is cooked
When it reaches an internal temperature of 63°C (145°F) at its thickest part.
The flesh should be opaque and flake easily with a fork.
I served mine with sweetcorn salsa and a bag of Tilda lime and coriander
basmati microwave rice, yes microwave rice, what am I like lol?
Well, some days you can’t be bothered with too much!

Air Fryer Cod

Ingredients
Salsa, the amount depends on how many servings
- a few deseeded and chopped baby tomatoes (grape tomatoes)

a couple of spring onions (green onions, scallions) washed, topped
and tailed and finely sliced - 1 green chilli – deseeded and finely chopped

a small 200g can of sweetcorn – drained well. I didn’t use the whole
can to serve two, I gave some to my chickens! - a small bunch of fresh coriander leaves only – chopped
- juice of a lime
- olive oil
- a good pinch of salt
The cod
-

Instructions
The cod, no need to preheat your air fryer!
- Spray the air fryer tray with rapeseed oil or similar.
- Coat the fish with melted butter and sprinkle with paprika.
