Mango Avocado Broccoli Slaw is an easy salad to throw together for a weeknight dinner, with healthy vegetables and mangos for a little sweetness topped with slivered almonds.
Spring is slowly rolling with temperatures still almost down to freezing at night which means it’s going to be a few more weeks until we can get fresh lettuce and salad ingredients. So if you are as tired of wilty winter mixed greens as I am, this is just what you need.
I loved the mango avocado mix with the broccoli slaw. The almonds added a nice crunch. It was super quick to throw together. Nothing complicated but I love fruit in my salad, and you just can’t go wrong with mangos. The hardest part about mangos is cutting them. I cut them like I would an avocado, with the skin left on, then make slices and scoop it out of the peel. This is a little harder though because of the weird seed. I have seen mango splitters and think I might have to try a new gadget. If you have used one, let me know what you think.
