Author Notes
The Nui Nui is one of Don Beach’s earliest tiki recipes. The use of Caribbean spice was a personal touch of his, which many consider a fundamental feature of tiki cocktails. This recipe includes two forms of spice—cinnamon syrup, as well as Don’s Spices (equal parts vanilla and allspice). As for the rum, a light-aged Hawaiian agricole rhum is specified, though you can use two ounces of any high quality rum you have at home.

2 ounces
Lightly Aged Hawaiian Agricole Rhum
½ ounces
Fresh Squeezed Lime Juice
½ ounces
Fresh Squeezed Orange Juice
¼ ounces
Cinnamon Syrup (2-1)
¼ ounces
Don’s Spices #2 (see note)
2 dashes
Angostura Bitters

Directions
- Shake all the ingredients with ice, then strain into a collins glass. Fill the glass with crushed ice. Garnish with an orange peel rosette and serve with a straw.
- Note — to make Don’s Spices #2, combine equal parts allspice liqueur (try St. Elizabeth) and vanilla liqueur (try Giffard). You can keep this mixture on your bar cart indefinitely.
