Hey there! I just wanted to pop in real quick to share this spinach, coconut bacon and egg pizza with you. This last week has been a bit of a whirlwind as we moved to a new neighborhood here in Chicago. I’m super excited about our new apartment which is now within walking distance of our favorite farmers market in the city which finally opens up again next week!
Speaking of the farmers market, the inspiration for this pizza came from a vendor that does fire oven pizzas at a different market in the city. I noticed that they bake one of the pizzas with eggs on top and I really wanted to try it at home. You guys, it is so good! To follow along the breakfast theme, I also sprinkled a bit of coconut bacon onto this pizza when it was almost done baking. (At this point, I always seem to have some of this coconut bacon on hand for such occasions. It is delicious!) The garlic-y spinach is a take-away from one of our favorite pizza places in the city which I thought would work well here to add some more flavor as well as a pop of color. As far as assembly, I kept everything else pretty simple by buying the whole wheat dough from Whole Foods and using a pre-made sauce.

Spinach, Coconut Bacon, and Egg Pizza
Jazz up pizza night with this breakfast-inspired spinach, coconut bacon, and egg pizza! The eggs are cracked on top before baking and cook with the pizza.

Instructions
To make the coconut bacon:

Preheat the oven to 350 degrees. Line a baking sheet with parchment paper.

In a large bowl, add all of the coconut chip ingredients and toss with a wooden spoon to coat evenly. Spread in a single layer on the baking sheet lined with parchment paper. Bake for 12-14 minutes , tossing halfway through, until golden brown. (Watch closely to the last few minutes so it doesn’t burn!) Remove from the oven and set aside to cool.
For the spinach:

While the coconut bacon is cooking, heat olive oil in a non-stick skillet and add spinach. Cook for 1-2 minutes until some of the leaves start to wilt. Add in the garlic, salt, and pepper. Saute until spinach is completely wilted. Set aside.
For the pizza:

Place dough on lightly floured countertop and roll out into a 12″-14″ disk. Transfer to pizza pan and bake for 10 minutes or until lightly browned.

Spread 1/2 cup pizza sauce over the crust and layer mozzarella slices over top. Drop sauteed spinach evenly around the pizza. Crack 3 eggs on top. (You’ll want to crack them near the center of the pizza.)

Bake pizza for another 25-30 minutes or until eggs are starting to firm. Sprinkle with coconut bacon and serve!
