Shahi Tukray or Shahi Tukra or Shahi Tukda is also called as Double ka Meetha, which is an exotic creamy dessert from the Royal Nawabi Hyderabadi Cuisine of South Indian state Telangana.
This sweet dish also called as ‘Double ka Meetha’ meaning a dessert having double the sweetness, is a traditional bread pudding from the closet of Indian desserts.
Shahi Tukra is a Royal dessert, a hyderabadi delicacy, basically from the Mughlai Cuisine during Mughal reign, a special royal treat, special dessert made for festive occasions.

Authentic Double ka Meetha Recipe:
The authentic Shahi Tukda recipe is made with pieces of bread deep fried in pure ghee, and then the ghee-fried bread is soaked in warm sugar syrup.
On the other side, full flat milk is thickened over medium heat for at least 30 min, then sugar is added to make thick rabri.
After bringing to room temperature, this rabdi is poured on the bread, garnished with dry fruits.
Instant Air Fryer Shahi Tukda Recipe Features:
This recipe of Shahi Tukda / Double ka Meetha recipe that I simplified, has the features of being most healthy, quick, oil free and easy when compared to the traditional method of Hyderabadi Shahi Tukda.
- not using ghee
- not deep fried but air fried without any oil
- instant rabdi made within 10 mins
- using unrefined cane sugar but not white sugar
- made in very less time of max 20 mins.

Possible Alterations for, ‘Shahi Tukra with Condensed Milk’:
Not using Condensed Milk: Pour full-fat milk (750 ml) into the sauce pan. Let it boil over stove top medium flame until the milk reduces to half. Then add the saffron and sugar ( 1cup). Mix everything well until sugar melts well. Switch off and use it as rabdi.
Vegan options: Coconut Condensed Milk and Almond Milk are the best replacements for Condensed Milk and Whole Milk that I have used.
Bread variety: Milk bread / White bread is best suitable for this rich dessert. However, whole wheat bread / brown bread can also be used.
Additional ingredients: For additional flavour, Rose water (1 tbsp), rose essence (1 teaspoon), ghee (1 tbsp) and kewra water (1 tbsp) can be added to the sugar syrup before soaking the fried bread.

Ingredients:
- White Bread – 4 slices (thick)
- Saffron / Kesar – 15 strands
- Sugar – 1 cup
- Water – ½ cup
- Sweetened Condensed Milk / Nestle Milkmaid – 1 can / 400ml
- Milk – ½ cup
- Cardamom Powder / Elaichi Powder – ¼ teaspoon
- Cooking Oil – 2 cups (for deep fry)
- Pistachios – 20
- Dry Rose Petals – 10
Special Ingredients:
- Condensed Milk
- Saffron Strands
- Dry Rose Petals
Step Wise pics Procedure for ‘Instant Shahi Tukra with Condensed Milk (Deep Fry, Air Fryer methods)’:
Prep Work:
Gather all the ingredients at one place on the kitchen platform. Put the saffron in warm water / warm milk to soak.
Cut the crust /edges of the bread slices. Then, cut each slice diagonally into 2 pieces and further into 2 pieces. So we get 4 triangular pieces from each slice.
Deep Frying Bread for Shahi Tukda:
Put a deep frying pan on stove top over high flame. Add cooking oil, let it boil to high.
Gently drop the bread pieces into the hot oil. Fry them on both sides until golden brown.
Air Frying Bread for Shahi Tukda:
Brush the air fryer mesh / basket with butter (optional step).
Place the bread pieces. Close the air fryer. Set to Air Fryer Mode, Time to 8 mins, temperature to 200C / 390F.
Half way through reverse the bread triangles.
To Prepare the Sugar Coating & to Soak:
Put a wide sauce pan on stove top over high flame. Add the sugar, water and little elaichi powder.
When the sugar dissolves completely, switch the flame off.
Immediately, add few fried bread slices into the sugar syrup. Let them soak on one side for 5 mins.
Then gently turn each slice to the other side to soak in the syrup for 5 more mins.
Repeat the same for all the fried bread pieces. Take the soaked bread pieces into a wide serving dish.
Arrange them one beside another as shown. Pour the remaining sugar syrup onto the pieces.
To Prepare Rabdi with Condensed Milk:
Into the same sauce pan add all these>> condensed milk, elaichi powder, milk, saffron with soaked water.
Put the pan on stove top over high flame. Keep stirring continuously but gently.
Bring it to a boil. Then switch the flame off.
Immediately pour this rabdi equally onto the bread triangles in the serving dish.
Garnishing:
Garnish with chopped pistachios and dry rose petals. Serve immediately or bring to room temperature before serving. Done!
Tips:
- You will have to use only thick bread slices for this recipe. Because once the bread is fried and soaked in syrup, rabdi it becomes thin. If you use thin slices the bread becomes a mush after a while.
- Adjust the sweetness as per your taste.
- There is no need for thread consistency of the sugar syrup, see that the sugar melts well.
- Storage: This dessert stays well at room temperature for 2 days.
- You can make sugar syrup store it in air tight container, make the rabdi well before and store it in fridge.
- Just fry the bread instantly and assemble everything else right before serving.

1 Sauce Pan / Vessel (to make sugar syrup and milk syrup)
- 4 slices White Bread (thick)
- 15 strands Saffron / Kesar
- 1 cup Sugar
- ½ cup Water
- 1 can Sweetened Condensed Milk / Nestle Milkmaid (400 ml)
- ½ cup Milk
- ¼ teaspoon Cardamom / Elaichi Powder
- 2 cups Cooking Oil / Ghee (for deep fry)
- 10 count Pistachios
- 10 count Dry Rose Petals (for garnish)
1cup=250ml; ¾ cup=180ml; ½cup=125ml; 1 tbsp=14ml; 1 tsp = 4ml
